Amber is our answer to one of the most common complaints we hear about tea: it's too bitter.

Not this tea.

Amber is incredibly forgiving. Even after hours in a thermos, teapot, or mug, it stays smooth, mellow, and rich. You can almost forget about it, and it'll still reward you with a beautiful cup.

With a short brew, it has a soft, gentle character. Leave it longer and richer notes of honey and plum begin to emerge.

Naturally low in caffeine, Amber is also an ideal afternoon tea.

 

Tell me more

This tea came to us through our supplier, Ke Wenhui, who comes from a family of tea makers in Fuding, China. Ke Wenhui has been collecting white teas for many years, and when he first came across this tea in 2012, he knew he had to put some aside to age. White tea of this age is exceptionally hard to come by, and we're incredibly grateful to be able to share some from his collection.

We knew this tea was naturally low in caffeine from our own experience of drinking it, but we were curious just how low, so we sent it to a lab for testing. We brewed 2.5g of tea in a 500ml thermos for one hour and sent a 100ml sample to a laboratory for testing. It contained 10mg of caffeine per 100ml—around one-eighth the caffeine of a double-shot latte. The ageing process naturally reduces the caffeine content, making Amber even lower in caffeine than our younger white tea, Solstice (19.6mg per 100ml).

What also makes this tea special is that it comes from Fuding, often regarded as the birthplace of white tea. Its subtropical maritime climate—with abundant rainfall, frequent fog, and mild temperatures—creates ideal growing conditions, producing some of the world's finest white teas.

Brewing guides

This is another tea where I would recommend trying thermos brewing before anything else. The tea leaves are tightly compressed and also from 2012 so they need a bit of time to release their flavour

Thermos 

Use boiling water with 2.5g of tea in a 500ml thermos of water steeped for 1 to 2 hours.

If you top it up with more boiling water after drinking a quarter or third of the thermos it will literally last all day without getting bitter or nasty. Finding your own rhythm of toping it up and drinking it through the day is part of the fun of this tea. 

If an hour is too long to wait, try 5g for 30 minutes. 

Teapot

3g per 100ml with boiling water steep for 3 - 4 minutes is a good place to start. This tea is really compressed so it needs a while to open up and draw out the flavours.

Gongfu

Use boiling water with 5-6g per 100ml of water and start with a long 30 second rinse to open up the tea. Then 15-20 second steeps, adding 5-10 seconds each steep depending on your desired strength. Can be steeped multiple times.
